There are many varieties of salsa, probably infinite varieties given that you can alter a recipe as you go along. I love all kinds of salsa, but there’s something about this super simple salsa that I always love. It’s very mild so you can really pile it on. Bring on the garden-grown tomatoes!
3 organic tomatoes, chopped
1/4 small onion, finely chopped
3 T cilantro, chopped
1 T EVOO
1 T red wine vinegar
S & P to taste
Mix everything together in a canning jar or pretty bowl, and stir well to combine. Serve at room temperature if possible — tomatoes lose their flavor when they’re cold.
