Want to make your own mayonnaise but you think it’s too complicated or hard? Not at all. You can make a full jar of fantastic mayonnaise in less than 5 minutes, and, chances are, you’ll never buy store-bought mayonnaise again. That’s my bet, anyway. You can make this with a whisk but your arm may not hold out for the entire job. A trusty Cuisinart works really well! ; )
Homemade mayonnaise is simply better than store-bought, and it can be used in many recipes that will be literally transformed because of it. Tuna salad, egg salad, various salad dressings, and, of course, Chocolate Mayonnaise Cake. Try it.
2 t dijon
1 t salt
2 T white wine vinegar
2 c lite olive oil
- Put everything into the bowl of a Cuisinart except the olive oil. Whip well, until the mixture is pale yellow.
- In a slow stream through the feed tube, slowly add the olive oil. The mixture will spatter at first but in a few seconds it will emulsify and thicken.
- Continue slowly pouring the oil until it is all used and the mayonnaise is thick and fluffy.
- Scrape the mayonnaise into a clean jar with a tight fitting lid and refrigerate.
