This sweet-tangy salad dressing is wonderful on a variety of salads, and especially good with any Mexican food entree. I love to serve enchiladas or burritos on a bed of lettuce that has been drizzled with it. Wildly great!
3 T fresh lime juice
3 T EVOO (or lite olive oil, according to taste)
1 T honey
1/2 t ground cumin seed
Mix everything together in a small canning jar or pitcher, and shake to completely combine. You may have to heat it slightly to get the honey incorporated.
