Cowboy Caviar

This is a delicious dip, almost a meal in itself, wonderful as an appetizer before a Tex-Mex meal, as a snack on Super Bowl Sunday, or just for family game night. It’s easy to put together and you probably have all the ingredients in your pantry without having to shop for anything special.

Serve Cowboy Caviar garnished with sliced avocado or mild salsa, and surrounded by a pile of corn chips. Make it more interesting by using blue or red chips in addition to or instead of the standard white or yellow ones.



Cowboy Caviar
1 can black beans
1 can olives, finely chopped
1 small onion, minced
2 garlic cloves, minced
2 T lime juice
1/4 t crushed red pepper
1/4 t ground cumin
S & P to taste

8 oz package of cream cheese, room temperature
8 oz sour cream

  1. In a medium-sized bowl, mix all the ingredients except the cream cheese and sour cream. Chill the black bean mixture for a couple hours, so the flavors ‘mingle.’
  2. Meanwhile, combine the cream cheese and sour cream and stir until smooth. Spread it into a shallow serving plate or pie pan.
  3. When the beans have chilled, carefully spoon the mixture over the cheese/sour cream mixture, place it on a large platter, and mound the chips on the platter around the dip.
