Italian Salad Dressing “Mix”

Here is a great way to have a constant, unending source of perfectly balanced Italian salad dressing. Keep it in a tightly-sealed jar and whip some up in a hurry any time you run out.  I like to use an old dressing jar as it’s always the right size, and it fits well in the door of the refrigerator.

St. John Salad

On a trip to St. John, in the USVI many years ago, I enjoyed this salad at the Caneel Resort in an open-air cafe. Wow!  It was truly delightful. Not wanting to lose that distinct mixture of  flavors, I recreated the recipe shortly afterward, bringing a memorable taste of the Caribbean back home.
This salad is a wonderful and unique combination of flavors that is fresh and delicious, perfect for a summer afternoon or light evening meal. It’s fast and easy, as well. Serve it with a loaf of fresh baguette, lemonade, and chewy chocolate brownies for dessert, and you’ve got a perfect picnic.

This is a versatile cold salad that goes well with any dish — sandwiches, chicken, or beef.  It’s also filling enough to be a vegetarian main dish alone for a light summer meal. It’s very quick to make, but does take a small amount of preparation in the time it takes to cook and chill the pasta.  Well worth the wait, too!

Homemade mayonnaise.Want to make your own mayonnaise but you think it’s too complicated or hard? Not at all. You can make a full jar of fantastic mayonnaise in less than 5 minutes, and, chances are, you’ll never buy store-bought mayonnaise again. That’s my bet, anyway. You can make this with a whisk but your arm may not hold out for the entire job. A trusty Cuisinart works really well! ; )
