Lemon-Blueberry Trifle

Here is a much-simplified version of the classic British dessert, updated with a burst of lemon curd and some crunchy gingersnaps. Like many of the Simply Good Cooking recipes, this one can be made quite simply by following the recipe as written, or by choosing a variation on the given ingredient list and making some of your own combinations.  For example, I’ve included the use of store-bought gingersnaps and lemon curd, but you could easily make your own cookies, as well as lemon curd.  That is up to you.  The options give you quite a bit of flexibility in how much time is you spend cooking, while not sacrificing flavor or quality.  If you do purchase store-bought ingredients, always look for the highest quality available and you won’t go wrong.

St. John Salad

On a trip to St. John, in the USVI many years ago, I enjoyed this salad at the Caneel Resort in an open-air cafe. Wow!  It was truly delightful. Not wanting to lose that distinct mixture of  flavors, I recreated the recipe shortly afterward, bringing a memorable taste of the Caribbean back home.
This salad is a wonderful and unique combination of flavors that is fresh and delicious, perfect for a summer afternoon or light evening meal. It’s fast and easy, as well. Serve it with a loaf of fresh baguette, lemonade, and chewy chocolate brownies for dessert, and you’ve got a perfect picnic.

Sloppy Joes

Thai Pasta Salad

This is a versatile cold salad that goes well with any dish — sandwiches, chicken, or beef.  It’s also filling enough to be a vegetarian main dish alone for a light summer meal. It’s very quick to make, but does take a small amount of preparation in the time it takes to cook and chill the pasta.  Well worth the wait, too!
