Thai Pasta Salad

This is a versatile cold salad that goes well with any dish — sandwiches, chicken, or beef.  It’s also filling enough to be a vegetarian main dish alone for a light summer meal. It’s very quick to make, but does take a small amount of preparation in the time it takes to cook and chill the pasta.  Well worth the wait, too!

Herb Stuffing

Everyone seems to have a favorite stuffing recipe for their holiday turkey. If you’ve got a favorite, you may have to make room on your “favorites” shelf for another one — this stuffing is addictive. Tangy, savory, and delicately spiced, this stuffing has been known to change the minds of people who previously felt they didn’t like stuffing. It cuts some corners by using a pre-packaged Herb Stuffing mix, but you can substitute your own mixture of breads if you’d prefer to make the whole thing “from scratch.”

Cajun Spice


cajun spice #2Back in the 80s there was something of a “Cajun” craze here on the west coast.  Restaurants added all kinds of “Cajun” dishes to their menus, like Blackened Swordfish, Red Beans and Rice, and these fantastic Cajun Chicken Fajitas I loved from a restaurant in Redondo Beach, CA. Without being unnecessarily dramatic, that dish literally changed my culinary life. Seriously. It woke me up to a whole new set of spices, flavors, and textures I’d never tried before. Magical.*
